Zesty Quinoa “Crab” Salad
I’m always struggling with ideas of what to make for lunches. When I did the poll last week, most people were looking for fresh and healthy dishes! This tastes fresh, bright, and delicious!
1 cup quinoa
2 cups water
1 tsp olive oil
1 avocado, diced small
5 sticks mock crab, cut into small flakes
½ english cucumber, diced small
1 small carrot, peeled and diced small
2 scallions, sliced small
¼ cup olive oil
Juice and zest of 1 lime
1 clove garlic, minced
Salt and pepper to taste
In a small pot, mix together the quinoa, water and olive oil. Bring to a boil, then lower to a simmer and cover. Cook for 15 minutes. Take the quinoa off the fire, leave covered for another 5 minutes and then fluff with a fork.
Mix together the quinoa, avocado, mock crab, cucumber, scallions. In a small bowl, whisk together the olive oil, lime juice, zest, garlic, salt, and pepper. Pour over the quinoa salad, and mix well.
