Steak Fajita Bake
1 tbsp oil
1.5 lb steak or beef cubes, cut into very thin slices against the grain
2 colored bell peppers, cut into thin strips
2 medium yellow onions, sliced thin
1/4 cup olive oil
Juice of 3 limes
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
2 tsp chili powder
1 cup mild salsa
Juice of 1 lime
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp chili powder
Preheat oven to 350 degrees.
Heat 1 tbsp oil in a large pan on the stove over medium high heat. Add the onions, sauté until soft, then add the peppers. Make sure to keep stirring every minute or so, so that it doesn’t burn. Remove the peppers and onions from the pan, and set aside. Add more oil if needed. Then add the meat to the pan. Cook until brown and cooked through.
Add the peppers and onions back into the pan, then turn the heat down to medium. Mix together the olive oil, lime juice, salt, pepper, garlic powder, and chili powder. Pour over the meat and peppers. Mix until fully coated.
Spray a 9×13 pan with nonstick spray. Pour in the 1 cup of salsa. Place some of the meat mixture down the center of the tortilla. Roll it up and place it seam side down in the pan. Repeat with remaining tortillas. Pour the pan juices over the top of the tortillas in the pan. Cook in the oven for 20-25 minutes.
Make the guacamole by mashing the avocados, and mixing it with the salt, garlic powder and chili powder.
Serve the fajitas with the guacamole and extra salsa if desired.
