Spinach Feta Salad with Quick Marinated Red Onions
1/2 cup olive oil
3 tbsp apple cider vinegar
2 tbsp maple syrup
1 tsp Dijon mustard
1/2 small red onion sliced thin
3 packed cups Spinach
1 cup arugula
4 oz feta cheese
1/2 lb strawberries
1/4 cup sliced almonds, toasted
Start by mixing together the ingredients for the dressing. Whisk until emulsified. Add the thinly sliced red onion and allow to marinate while preparing the rest of the salad.
To toast the almonds, if you don’t already have toasted, add the almonds to a dry nonstick frying pan. Toast over medium heat until they are fragrant and turn golden. Watch because they quickly turn from golden to burnt.
In a large bowl. Place the spinach and arugula. Slice the strawberries thin and add the salad. Then cube the avocado and add to the salad as well. Crumble in the feta and sprinkle on the toasted almonds. Pour in the onions and dressing. Mix together until well combined.
