Quick and Easy Gnocchi in Meat Sauce
1 tbsp oil
1 large zucchini
1 lb ground beef
2 cups marinara sauce
1 cup vegetable or chicken stock
1 cup dry red wine
1/2 tsp red chili flakes
1 lb package of gnocchi (I used Bartenura Brand)
Fresh basil, sliced for garnish
Fresh cracked black pepper
Dice the zucchini really small. Heat the oil to a medium pot over medium high heat. Add the zucchini and sauté until soft. Add the ground beef and brown. Drain the liquid. Add the marinara sauce, veggie stock, red wine and red chili flakes. Bring to a low boil and cook for 15 minutes, stirring every 5 minutes. Add the gnocchi, mix well and cook for another 5 minutes.
Scoop several gnocchi and sauce into a bowl or plate. Garnish with fresh basil and freshly cracked pepper.
