Plum Sauce Meatballs

6 plums with peels, large dice
1/3 cup white wine vinegar
1/2 cup brown sugar
3 cloves garlic
2 tsp fresh ginger
1/4 tsp red pepper flakes

Meatballs:
1 lb ground beef
1 egg
¼ cup panko crumbs
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder

Scallions, for garnish (optional)

Place a wide, medium pot over medium heat. Add the plums, vinegar, brown sugar, garlic, ginger, and red pepper flakes. Allow to simmer for 25 minutes.

Line a baking sheet with foil and spray with nonstick spray. Mix together the ground beef, egg, panko, salt, pepper, garlic powder, and onion powder. Form golf ball size meatballs and place on baking sheet. Broil on high for 7-10 minutes. Make sure to check on them because they may need more or less time depending on your oven.

When the plums are soft and the sauce has simmered for 20 minutes, use an immersion blender to blend the sauce until smooth. Add the meatballs and let it sit in the sauce on medium-low for about 5 minutes.

Serve with rice and garnish with scallions.
