Pasta with Spicy Tomato Sauce
This sauce is spicy but the heat is not overwhelming. If you want to adjust the spice, use less or more red pepper flakes to your preference.

1 tbsp oil
1 onion, diced
4 cloves garlic, minced
1 tsp oregano
½ tsp salt
½ tsp red pepper flakes
1/2 tsp black pepper
1 tbsp dried basil
1 tbsp dried parsley
½ cup dry white wine
1 6 oz can of tomato paste
1 cup water, chicken or vegetable stock
1 box whole wheat pasta of choice, cooked according to package
In a heavy bottom pot, heat 1 tbsp oil over medium heat. Add the onion and saute until soft. Add the garlic and heat for 1 minute, Add the spices, heat until fragrant, and then deglaze the pan with the white wine. Add the tomato paste and water or stock. Mix well. Lower the heat to medium low, and simmer for 20 minutes.
Serve by placing pasta on a plate. Top with optional protein and then sauce.
