Oven “Grilled” Zucchini
This has all the flavor of grilled zucchini without having to put in the effort lot of using the grill. It may seem simple enough, but often the simplest recipes are the ones we overlook. And I’m always looking for new veggie side dish recipes, and it’s also kosher for pesach!
3 medium zucchini, cut into thin, long slices
1 tsp salt
~2 tsp olive oil
1/2 tsp freshly ground pepper
Spray a baking sheet with nonstick spray. Place the zucchini on the tray. Sprinkle salt on both sides, let sit for 10 minutes. Pat fry with a paper towel, then drizzle with the olive oil and sprinkle with the pepper. Place pan in the oven on the highest shelf. Broil on high for 2-3 minutes, then flip the zucchini slices over and broil for another 2-3 minutes.
