Loaded Taco Nachos

Take Taco Tuesday to the next level!

Nachos:

12 corn or flour tortillas cut into 8 triangles each

1 tbsp canola oil
1 lb ground beef
1 pack taco seasoning
1/2 cup water
1 large onion, diced
3 jalapeños, diced
1 cup frozen or canned corn
1 cup arugula
1/2 cup fresh tomatoes, diced
1 large avocado diced

Sauce:
1/2 cup mayo
1/4 cup taco sauce

Preheat oven to 400. Prep a baking sheet by lining with parchment paper. Working batches, place the tortilla wedges on the baking sheet, spray with nonstick spray and bake for 8 minutes. Repeat with remaining tortillas.
Heat 1 tbsp oil in a large frying pan over medium heat. Add the meat, and cook until brown. Drain, then add the taco seasoning and water. Mix until combined.
Remove meat from pan, add the onion, and sauté over medium high until translucent and edges begin to brown. Set aside.
Add the jalapeños and cook until soft. Set aside.
Add the corn, and cook until edges darken.

Make the sauce by mixing together the mayo and taco sauce.

Assemble:
Plate individually or serve on the sheet pan.
Spread the chips as the bottom layer, top with meat, onions, arugula, corn, avocado, and tomato.

Drizzle with sauce!

Note: if you don’t have taco seasoning, mix together 2 tsp cumin, 1 tsp chili powder, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp oregano, 1/2 tsp salt, 1/2 tsp pepper and use instead.
