I am slightly obsessed with dips. I love having a variety of options on my shabbos table to start the meal with challah. Onion dip is a classic and is so easy to throw together. But I was also looking for a non-mayo based dip, so I created the onion and leek dip, and it’s so delicious! So here’s a 2 for one recipe: a classic Caramelized Onion Dip, and a not so classic Caramelized Onion and Leek dip! Hope they enhance your Shabbos table.

Caramelized Onion Dip

1 tbsp canola oil
2 onions, diced
½ cup mayo

In a large frying pain, heat 1 tbsp oil over medium high heat. Add the onions and cook until caramelized and brown. It will take about 20 minutes. Make sure to keep stirring so the onions do not burn. You can also do this over low heat with less stirring. It will take 1 hour this way, but does not require as much stirring and the color will not be as deep.

Remove the onions from a pan once caramelized, mixed it in with ½ cup of mayo. Serve with Challah.

Caramelized Onion and Leek Dip

1 tbsp canola oil
1 onion, sliced thin
2 leeks, sliced thin
½ tsp salt
¼ cup olive oil

Heat 1 tbsp of canola oil in a frying pan over medium high heat. Add the onions, leeks, and salt. Cook until caramelized and brown, keep stirring so it doesn’t burn. It will take about 20 minutes. Transfer to a blender. Add the olive oil and blend until smooth.
