Honey Garlic Smashed Potatoes

3 tbsp sesame oil, divided
3 cloves garlic, minced
1 tbsp soy sauce
2 tbsp honey
1.5 lbs mini red potatoes
Kosher salt

Preheat oven to 425.
In a large pot, place the potatoes and cover with water. Place over medium high heat, bring to a boil and boil for 20 minutes until fork tender.

Line a baking sheet with parchment paper, remove the potatoes from the water and place on the baking sheet. Use a fork to press down on the potatoes so that they are smashed. Be careful as the potatoes are very hot. Drizzle with 1 tbsp sesame oil and cook at 425 for 30 minutes until the edges begin to brown and get crispy. Mix together 2 tbsp sesame oil, the garlic, soy sauce, and honey. Brush over the potatoes. Cook for another 10 minutes. Remove from oven and sprinkle with kosher salt.
