Gluten Free Lemon Squares

2 cup almond flour
1/4 cup coconut oil
6 tbsp maple syrup
1 tbsp vanilla sugar

Mix in food processor until dough forms. Pour out into a greased 9×13. Press down to form a crust. Bake at 350 for 18-23 minutes. Remove from oven and allow to cool slightly.

2 cups sugar
Zest and juice of 2 lemons
6 eggs
3 tbsp coconut flour + 3 tbsp tapioca starch (or 6 tbsp of potato starch)
Powdered sugar for topping

Mix together the sugar, lemon zest and juice, eggs, coconut flour, and tapioca starch. Carefully spoon mixture onto crust. Bake at 350 for 30-35 minutes, until no longer jiggly. Let cool, cut into squares and sprinkle with powdered sugar.
