Family Friendly Fish Sticks with Lemon Dill Aioli
2.5-3 lb salmon filet
2 large eggs
2 tbsp lemon juice
3.5 cups seasoned breadcrumbs
1 cup mayo
3 tbsp lemon
3 tsp dill or frozen dill cubes
1/2 tsp salt
1/2 tsp garlic powder
Preheat the oven to 450.
Prepare baking sheets by placing cooling racks on top of 2 baking sheets. Spray with nonstick spray.
Cut the salmon into 2-3 inch long and 1 inch thin strips. Mix together the lemon juice and eggs. Place the salmon strips in the egg/lemon mixture. Let soak for 5-10 minutes.
Dip the salmon sticks in the breadcrumbs and turn until coated, then place onto the prepared baking sheet. Cook at 450 for 20 minutes.
Prepare the lemon dill aioli by mixing together the mayo, dill, lemon juice, salt, and garlic powder.
Serve fish sticks with aioli.
