Everything but the Laffa Stuffed Butternut Squash.

At Israeli restaurants I love getting a laffa stuffed with salatim and chicken. This takes it up a notch by stuffing it all into a butternut squash. This is super customizable! Use your favorite salads or put it in an eggplant if you’d rather.

Ingredients:
1 butternut squash, cut in half
2 tsp olive oil.

3 shredded carrots
1 tsp Dijon mustard
1 tsp lemon juice
1 tsp olive oil
Salt and pepper

1/2 English cucumber, diced
1/2 tomato or red pepper diced
2 tsp olive oil
2 tsp lemon juice
Salt and pepper

1 tsp oil
1 cup basmati rice
1/2 tsp turmeric
1/4 tsp cumin
1/2 tsp salt
1.5 cups water

1/4 cup tahini paste
1/4 cup lemon juice
2-3 tbsp water
Salt to taste

1/4 cup mayo
1/4 tsp cumin
1/4 tsp chili powder
1/2 tsp garlic powder
1 tbsp water
1 tbsp lemon juice

Israeli pickles, sliced
1 onion, sliced and caramelized
Teriyaki chicken, shawarma, or shnitzel, cubed

Instructions:

Preheat the oven to 425. Line a baking sheet with parchment paper. Remove the seeds from the butternut squash. Drizzle with olive oil. Cook face down on baking sheet for ~30 minutes until soft.

Carrot Salad: Mix together 3 shredded carrots, 1 tsp Dijon mustard, 1 tsp lemon juice, 1 tsp olive oil, Salt and pepper to taste.

Israeli salad: mix together 1/2 cucumber diced small, 1/2 a tomato (or a red pepper if you don’t like tomatoes) diced small, 2 tsp lemon juice, 2 tsp olive oil, and Salt and pepper to taste

Yellow Rice: in a pot heat 1 tsp oil over medium high heat. Add 1 cup rice, 1/2 tsp turmeric, 1/4 tsp cumin, and 1/2 tsp salt. Toast slightly. Add 1.5 cups water. Bring to a boil, cover and then lower to a simmer for 18 minutes.

Techina: mix together 1/4 cup tahini paste, 1/4 cup lemon juice, 2-3 tbsp water, Salt to taste until smooth

Garlic Mayo: mix together 1/4 cup mayo, 1/4 tsp cumin, 1/4 tsp chili powder, 1/2 tsp garlic powder, 1 tbsp water, 1 tbsp lemon juice

To assemble: place 1/2 a butternut squash on a plate, scoop out a small amount of the flesh. Top with yellow rice, Israeli salad, carrot salad, pickles, caramelized onions, and chicken. Drizzle with garlic mayo and techina.
