Chicken Marsala Bites

There are officially 2 countdowns on my mind. The countdown to match day (only 13 days away 😬)
And the countdown to pesach (21 days away). Over the next few weeks I’ll try to share some easy, but delicious pesach recipes. This recipe is delicious and makes a great chol hamoed dinner. Eat alone or on top of mashed potatoes.

Chicken Marsala Bites

1 lb chicken cutlets cut into bite sized pieces
1/2 cup potato starch

1/4 cup oil
1 large shallot, sliced thin.
8 oz mushrooms
2 cloves garlic, minced

1 cup Marsala wine
1 cup broth
1/2 tsp salt
1/2 tsp thyme
1/2 tsp pepper
1 tsp potato starch

Place the 1/2 cup of potato starch in a bag. Add the chicken. Shake so that the chicken is well coated in the potato starch.

Heat the oil over medium high heat in a large deep frying pan. Add the chicken and cook until all sides start to turn golden brown and crisp up. Set chicken aside.

Turn heat to medium. Add the shallot, mushrooms, and garlic. Cook until the scallions and mushrooms soften. Deglaze the pan with the Marsala wine. Add the broth, salt, pepper, thyme, and potato starch. Bring to a boil, then lower to a simmer. Add the chicken back into the sauce, cover and cook for 15 minutes.
