Apples and Honey Chicken
Onion, Apple and Honey Jam
2 tbsp oil
3 large onions, diced
2 red apples, diced very small
1/3 cup honey
2 tbsp apple cider vinegar
1 whole chicken, cut into 8ths
In a large frying pan, add 2 tbsp of oil over medium heat. When the oil is hot, add the onions. Sauté for about 5 minutes, then lower the heat to medium low. Cook over medium low heat for about 30 minutes, only stirring every 8-10 minutes. Add the apples after 30 minutes. Cook until soft- about 15 more minutes. Add the apple cider vinegar and honey. Cook for another 10-15 minutes.
Spray a pan with nonstick spray and then add the chicken. Spread the jam over the chicken making sure the chicken is well covered. Cover the pan and marinate in the fridge overnight.
Preheat the oven to 375. Place the chicken, covered, in the oven for 1 hour. After 1 hour, increase temperature to 425, uncover the chicken and cook for another 25 minutes.
Every oven is different and may need more cooking time for the chicken to turn a golden brown. If your chicken is not brown after cooking 30 minutes, turn the broiler on high and place the chicken under broiler. Make sure to check the chicken every minute or so to prevent it from burning.
Note: this chicken can be made in steps. You can make the onions a few days in advance, then marinate it the night before or starting the morning before you plan on cooking it. If you want to skip the marinating step, that’s ok too!
