10 Minute Veggie Stir-Fry
2 tbsp sesame oil, divided
1 onion, diced small
1 bell pepper, diced small
1 clove garlic, minced
1 tsp fresh or frozen minced ginger
2 tbsp low sodium soy sauce
Scallions for garnish
1 8 oz package ramen or rice noodles prepped according to package
Prepare noodles according to package.
In a large frying pan, over medium high heat, add 1 tbsp sesame oil. Add the onion and sauté until soft, continually stirring. about 3 minutes. Add the pepper and sauté for another 4 minutes. Add the garlic and ginger. Sauté for 1 minute, then add the other tbsp of sesame oil and the soy sauce. Mix, while scraping the bits off the bottom of the pan. Then add the noodles. Mix until combined.
Top with scallions.
